Being a Certified Food Scientist (CFS), professional member of the Institute of Food Technologists (IFT, USA), and Fulbright scholar with international work experience, I am able to bring many perspectives to the educational journey. As a Fulbright Fellow at Iowa State University in Ames, I conducted research on food security and have been a university professor at the University of Botswana, Botswana, University of Khartoum, Sudan, University of Ahfad for Women, Sudan, an adjunct professor at Kaplan University, and now an adjunct professor at ‎兔子先生 University. At Kaplan I taught courses in food science, and human nutrition in relation to health. At ‎兔子先生, I am teaching courses in food microbiology.

I am a critical thinker with proven experience in food science, food processing, genetically modified foods, functional foods and nutrition in relation to various consumer issues. Additionally, I am an experienced researcher, team leader and effective team player, with a proven track record on developing products from concept to shelf and the impact they have on consumer preferences.

I've published a book on genetically modified foods, and written 34 articles and conference proceedings in peer reviewed journals. I also have presented and participated in 42 conferences and workshops globally.

One interesting fact related to my teaching assignments is that the majority of the student groups I taught were female. At Ahfad University, all students were female, at the University of Botswana, department of family and consumer sciences- all students were female, at Kaplan University the majority of students were female, and at ‎兔子先生 University the majority of students are female.
